    Sacristains with Glace Royal

    Authentic Sacristains, are filled and topped with almonds and a specialty glace royal. The glace royal is an exquisite mixture of egg whites and icing sugar, and is dated back to the 1600s.
    The origin of the‚Sacristains‘ is quite vague, however translated from French ‚Sacristains‘ means ‘parish clerk‘, which is an official who is appointed different responsibilities at a church. Why is this fabulous pastry called ‘Sacristains’? It’s said that it’s similar to a parish clerk’s walking stick or the rope that was tied around that walking stick. Whatever the actual meaning, it undoubtedly is a heavenly pastry!
    Fun Fact: In 1840, The Glace Royal was used to coat and decorate Queen Victoria’s wedding cake!
